Frittata, which translates to "fried" in Italian, is an egg-based classic brunch dish. We have a delicious recipe with courgette, broccoli and peppers. Full of vitamin and low in carbs.
Preheat the oven at Gas Mark 5 or 190C. Pour the olive oil in a medium non-stick frying pan over a moderate heat. Once the oil is hot, drop in the onions, courgette, broccoli and the red and yellow pepper. Fry them for around 5 minutes, or until softened. Put the eggs in a bowl and mix the milk and cheese into the frying pan. Season the egg mixture with oregano, thyme, salt and pepper. Stir the vegetable mixture into the egg mixture. Place it all in an ovenproof dish and bake for 25 minutes. Serve hot or cold.
