Who needs potatoes when you can make cauliflower mash?
Preheat the oven to 225C. Grease a baking tray with the butter and place the chicken in it and season well. Slice the garlic cloves and sprinkle, with the parsley, over the chicken pieces, and drizzle the lemon juice and olive oil on top. Bake the chicken until golden and the garlic slices have turned brown and roasted, about 35 minutes, depending on how large the pieces are. Serve with cauliflower mash, mashed with butter and topped with grated cheese and 3 cooked asparagus spears.
